Malted Waffle Ice Cream Sandwich!!

 

It's a Baked Sunday Morning! and a challenge not to be missed this week. Now I must admit I made these yummy waffles a few months ago and I've been waiting for an excuse to try them again. At the moment I'm a bit obsessed with turning everything in to some form of an ice cream sandwich, they're just so darn delicious! You can find the recipe here.

You'll need a waffle iron for this recipe, they don't cost much and make a wonderful gift. The batter is easy to whip up in a few minutes and consists of flour, malt powder, brown sugar, bi-carb soda, baking powder, salt, eggs, buttermilk (I used milk soured with lemon juice) and melted butter.

I kept my waffles warm in the oven on a wire wrack/tray to prevent them forming a 'soggy bottom' whilst cooking the rest.

My table was set with little pots of Belgium dark and milk chocolate drops, the last of my batch of birthday cake crumbs and good quality maple syrup.

Livvy Lou enjoyed her waffles which pulled apart into precious little love hearts.

Tali took the first bite out of my special waffle ice cream sandwich that was layered with choc chips, vanilla ice cream, birthday cake crumb and topped with maple syrup.

And I had mine as Matt and Renato from Baked Explorations suggests, drizzled with butter, choc chips and maple syrup, delish!

 This recipe is a keeper and the only adjustment I had to make was using milk that I soured with the juice of one lemon, as I forgot to buy the buttermilk.

  2. Okay, now I really want to get a waffle maker - one like yours! I love the heart shapes. What a great idea to make them into ice cream sandwiches. I can tell you daughters are enjoying theirs. Beautiful job!

  3. love that you turned these into ice cream sandwiches! my daughter would flip if i let her have ice cream for breakfast! that's an awesome treat! your waffles are super pretty! great use of leftover crumbs (milk bar is another one of my fave cookbooks!

  5. Great waffeling! You did just what I had planned to do, except now I'll have to do it next time. We loved this recipe too...I'm thinking of making it again for today's supper.
